Fresh vs. Day-Old: Why Malasadas Should Be Eaten Hot

A malasada is at its best in the first few minutes after it leaves the fryer. The outside is crisp and sugary. The inside is soft, airy and still warm. A few hours later, both have changed.

That is why every malasada at Onoh’s is fried to order and served hot. Here is what happens to fried dough as it sits, and how to get the most out of every box.

What changes as a malasada sits

  • The crust softens. Moisture from the soft center moves outward into the crisp shell. The crunch fades within an hour or two.
  • The sugar soaks in. Sugar clings best to a warm surface. As the malasada cools, the coating absorbs oil and goes damp.
  • The crumb firms up. Fried dough goes stale the same way bread does, as its starches recrystallize. A cooled malasada eats denser and chewier than a fresh one.
  • Fillings lose their contrast. Part of the appeal is warm dough around a cool, creamy filling. At room temperature, that contrast is gone.

Fried to order vs. made ahead

Some bakeries fry malasadas in a batch early in the day and sell them from a case. That is convenient. It is not the same as a malasada eaten minutes after frying.

At Onoh’s, malasadas are made fresh all day. You choose your sugar, filling and drizzle, and we fry it when you order. The same dough goes into the malasada buns for our breakfast sandwiches, which are cooked to order too.

How to eat them at their best

  • Eat the first one in the car. We mean it.
  • Bringing a box to the office or a party? Pick it up as close to serving time as you can. Order online and choose a pickup time right before you need them.
  • Crack the box lid on the drive. Trapped steam softens the crust faster.
  • Ask for the sugar coating you want on top. It is the first thing to fade, so eat sugar-heavy ones first.

How to reheat a malasada

  • Air fryer: 2 to 3 minutes at 350°F. The best way to bring back some crunch.
  • Oven: about 5 minutes at 350°F on a baking sheet.
  • Microwave: 10 to 15 seconds. Fast, but the outside stays soft.

Cream fillings do not love heat, so reheat unfilled malasadas when you can. If the sugar has soaked in, roll them in a little fresh sugar after warming.

Feeding a group?

Frequently asked questions

How long do malasadas stay good?

They are best within an hour or two of frying. They are still good later that day, just softer. By the next morning, reheat them.

Can you freeze malasadas?

Unfilled malasadas freeze well for a few weeks in a sealed bag. Thaw at room temperature, then warm in the oven or air fryer. Fresh is always better.

Are Onoh’s malasadas made fresh?

Yes. Malasadas are made fresh all day and fried to order, so they come to you hot.
