If you have never had a malasada, the easiest way to describe it is this: imagine the best doughnut you have ever had, still warm, but lighter and eggier, with a crunch of sugar on the outside.
The taste
- Outside: slightly crisp, golden and coated in sugar that crunches a little when you bite.
- Inside: soft, airy and a little rich, with a flavor closer to a sweet bread than a cake doughnut.
- Sweetness: the dough itself is only lightly sweet. Most of the sweetness comes from the sugar coating and any filling.
What a malasada is made of
Traditional malasadas are made from a yeast dough of flour, eggs, sugar, butter and milk. The dough rises, gets portioned into balls and is fried, then rolled in sugar. The eggs and butter give it that rich, soft inside.
Fresh vs. not fresh
Freshness changes everything. A malasada straight from the fryer is crisp outside and soft inside. After a few hours it loses that contrast. That is why Onoh’s fries every malasada to order.
